Viscaya Baking Company is based in Visalia, CA and bakes small batches on a regular schedule.  See the Flavor Schedule link.  We can also schedule foodservice or catering quantities off schedule with sufficient notice, and can pack brownies individually wrapped or in foodservice warming trays.

While founded in 2025, Viscaya Baking Company has a long connection to the baking world.  Founder Maria McElroy used to enjoy visiting her Grandmother Dorothy as a young child, because her home always smelled like an oven in use with delicious scents wafting throughout.  And Maria was founder of the Dinuba Viscaya Cookie Walk, an event which started in 2014 and draws hundreds, if not thousands of Dinuba area residents each year to enjoy baked goods -- like trick or treating at Halloween time, but during the Christmas season.
